Who doesn’t love a quick treat that’s easy to make AND pretty? I sure love to make tasty things and the holidays always have me looking for fun desserts to make. Sometimes I’m not in the mood to do a lot of baking—or to heat up the oven—so I’ll make quick and easy treats such as these fun little “nests.”
One of the easiest desserts on earth has to be the Rice Crispy Treat! They are inexpensive to make and if you don’t mind cleaning up a sticky bowl, they take little time with minimal expense. They also lend themselves to any shape since they can be molded while warm into just about anything! I’ve made Rice Crispy Treat wreaths at Christmas and even made small bowls to hold candy for the kids at Halloween.
Since I had all the supplies and wanted to make a sweet treat this weekend I decided to make these cute little “nests” and fill them with fancy jelly beans! So fun, so yummy and SO easy!
Ingredients for making 12 Rice Crispy Treat Easter nests:
5 cups Rice Crispy cereal
1 teaspoon vanilla
1/4 cup melted butter
4 cups marshmallows
Mini eggs (jelly beans or chocolate, etc.)
Instructions to Make Rice Crispy Treat Easter Nests:
Lightly grease the inside of muffin trays with butter.
Heat marshmallows in a microwave-safe bowl for 25 seconds. Stir and continue melting for 10 second intervals. Remove from microwave.
Stir in melted butter and vanilla to incorporate and begin adding rice cereal, one cup at a time.
Scoop mixture and press into the bottom and sides of muffin trays. It’s helpful to slightly wet your hands while pressing mixture since it will be very sticky.
Place in the refrigerator for at least two hours.
Remove the nests from the muffin trays, gently prying with a spoon if needed.
Fill muffin cups with candy and enjoy!
