Ashley’s Chewy Ginger Cookie Recipe
I’m pleased to share with you an amazing recipe that has become a sweet family tradition.
The holiday’s are here and this season always inspires me to bake. I like making comfort food, soups and stews, and always my favorite Chewy Ginger Cookies! These are favorites of my boys and my Mom makes them whenever they visit-even when it’s not the holiday season!
Here’s a quick tutorial and recipe for these amazing cookies. Please note that although the process is quick, you’ll need at least two hours of chill time for dough in fridge. You can even make the dough and chill overnight to cook the next day.
Makes 3-4 dozen cookies
Ingredients for Ashley’s Chewy Ginger Cookie Recipe:
2 1/2 cups all purpose flour
2 1/4 teaspoons baking soda
1/2 teaspoon salt
1 tablespoon ground ginger
1/2 teaspoon allspice
1/2 teaspoon white pepper
1/2 cup packed brown sugar
1/2 cup granulated sugar
1 cup plus 2 tablespoons unsalted butter
1 large egg
6 tablespoons molasses
1/2 cup sugar for dusting dough
Directions for Making my Chewy Ginger Cookies:
Whisk together flour, baking soda, salt, ginger, allspice and white pepper. Set aside.
Using electric mixer, cream together sugars and butter for 5 minutes. Add egg, and molasses. Add flour mixture until combined.
Form dough into a ball and wrap in plastic. Chill dough in refrigerator for 2 hours or overnight.
On a lined baking sheet, form dough into 1” balls, dust with sugar and place on baking sheet. Dust with sugar and place on sheet. Press down lightly with palm of hand into a small disk.
Bake 10-12 minutes at 350 degrees.
These cookies make the perfect holiday surprise for friends. Place them on a plate and wrap with cellophane. Tie with a pretty ribbon and you have the perfect gift!
